Wines of Albert Bichot with Troy Heinzman. In 1831, Bernard Bichot founded a wine trading business in his name in Monthélie. His son, Hippolyte, succeeded him and bought the first vines in Volnay, already convinced that upstream control was essential. His son, Albert Bichot, the first to bear the name, gave the family business new momentum in the late 19th century and settled in the centre of Beaune once and for all in 1912. From fathers to sons, the company has remained in the family’s hands and now their vineyards total 6 estates that cover Burgundy from north to south. Vacherousse d’Argental Special buy – lower price $16.99/lb. This is our go-to…to die for…save some just for you….most decadent French favorite of all time soft ripened cheese—just ask our cheesemongers!! Vacherousse is a very smooth, creamy French cheese, with a texture of thick clotted cream and has a fresh lively flavor. A soft, pure cow’s milk cheese made in the Lyon region of France, its bloomy white rind is edged in orange and when perfectly ripe will sink slightly around the perimeter. The flavor is milk with hints of meadow and the rind is not at all bitter. The texture is creamy and velvety at its peak ripeness– and unfolds delicate aromas.
The rind is washed with salt water and then set aside for three weeks to allow a white mold to develop on the rind. Wonderful served with crusty bread and a glass of favorite wine. Trust us…tuck some away – in the fridge…be selfish!
Il Nocciolo From Alta Langa, Il Nocciolo means “the Hazelnut tree” in Italian. It comes in a paper doily like an after-dinner petit four. This petite robiola-style cheese is made with a blend of cow, sheep and goat milk. Delicate and delectable. $6.99/ea
Tom’s Alpkase A traditional Swiss Alpine cheese made in the Italian style. The drier cellaring creates a crisper, dryer crunch than Gruyere or Comte. The cattle graze in a nature sanctuary high in the mountains during summer. Raw milk, silage free. Aged 24 months. $33.00/lb
