Tom’s Alpkase A traditional Swiss Alpine cheese made in the Italian style. The drier cellaring creates a crisper, dryer crunch than Gruyere or Comté. The cattle graze in a nature sanctuary high in the mountains during summertime. Raw milk, silage free. Aged 24 months. $33.00/lb
Rooie Sikke A matured goat cheese named for the red bearded goats of the Netherlands. It boasts sweet, fruity aromas, a creamy yet toothsome mouthfeel and finishes with notes of toasty, buttered brioche. Pairs perfectly with Rosé wine. $27.00/lb
Toma della Rocca Made of cow, sheep, and goat’s milk, Toma della Rocca is like eating a slice of cheesecake. The texture is chalky and whipped, with a runny creamline; the taste is mild, rich, and subtly tart. Aged for a maximum of ten days, about as fresh as you can get. $27.00/lb
