Tom’s Alpkase A traditional Swiss Alpine cheese made in the Italian style. The drier cellaring creates a crisper, dryer crunch than Gruyere or Comté. The cattle graze in a nature sanctuary high in the mountains during summertime. Raw milk, silage free. Aged 24 months. $33.00/lb
Rooie Sikke A matured goat cheese named for the red bearded goats of the Netherlands. It boasts sweet, fruity aromas, a creamy yet toothsome mouthfeel and finishes with notes of toasty, buttered brioche. Pairs perfectly with Rosé wine. $27.00/lb
Toma della Rocca Made of cow, sheep, and goat’s milk, Toma della Rocca is like eating a slice of cheesecake. The texture is chalky and whipped, with a runny creamline; the taste is mild, rich, and subtly tart. Aged for a maximum of ten days, about as fresh as you can get. $27.00/lb
Tasting Event – Thursday, October 25, 6pm
2015 Bordeaux with Paul Dietz of Craft & Estates
Join us to sample a selection of the highly touted 2015 vintage! From The Wine Advocate’s Neil Martin, “There is no question that 2015 is the best Bordeaux vintage since 2010, so let’s clear that up first…Suffice to say that unless these 2015s do close down and enter a dumb phase (and I cannot see that happening), these wines will be delicious in their youth yet deceptively long-lived. They have the balance, freshness, acidity and body to warrant cellaring, but my God, they are going to be difficult to resist year-on-year.” We will taste Chateau de Lussac $19.99/btl, Chateau Joanin Becot $29.99/btl, Chateau Les Cruzelles $36.79/btl, Chateau Franc Mayne $54.50/btl, Chateau Bellevue $65.00/btl, and Clos l’Eglise $116.95/btl

Wine of the Week
Saint Cosme Cote Rotie ’16
“Bright purple. A complex, expansive bouquet evokes candied dark berries, olive, smoked meat and incense, and floral and mineral notes build steadily. Sweet, focused and penetrating on the palate, offering sappy boysenberry, cherry and violet pastille flavors braced by a spine of juicy acidity. Impressively blends concentration and energy and finishes with impressive, gently tannic persistence.”
(92-94) Vinous $79.99/btl
