Tommette Brulee From master affineur Rodolphe Le Meunier. A classic Petit Basque aged for a few months, then burnt with an open flame. The result is beautiful; grassy and sweet yet with added caramely, smoky, nuttiness from the open flame. $31.00/lb
Cabra al Gofio Using a traditional method of coating the rind in toasted corn flour (gofio), this goat’s milk cheese is striking in appearance and super approachable. Pleasantly milky and mild with subtle hints of roasted cornmeal and a unique sweetness to the finish. $22.99/lb
Majorero with Pimenton Aged version of the Canary Island goat cheese, Queso Majorero DOP, coated in Spanish paprika. Made with whole goat’s milk, it is aged over 60 days. Compact and somewhat crumbly with an intense goat flavor that is perfectly complemented by the smoky paprika. $26.99/btl
