Cheese Board
Le Chartreux Raw cow milk cheese with its pretty rind and paste going from ivory to yellow, Le Chatreux offers a fondant texture and a very fruity taste that lingers on the palate. The milk comes from Swiss cows and the cheese is then aged in a French castle. $21.00/lb
Delice de Bourgogne Creamier, more decadent answer to its classic cousin Saint Andre. This old style triple crème is the perfect union of full-fat milk to fresh cream, balancing a rich, full bodied flavor with a delicately smooth, melt in the mouth texture. $21.00/lb
Hafod Cheddar A Neals Yard Dairy selection – Cheddar with a supple, golden paste and the occasional blue vein. The flavors are rich, layered, and generally less acidic than other cheddars. A true artisanal gem from Rob Howard at the Hollden Farm Dairy. $25.00/lb
Wine of the Week
Chateau Dalem Bordeaux ’15
“Composed of 90% Merlot and 10% Cabernet Franc, the 2015 Dalem spent 18 months in part new and part one-year-old oak barrels. Medium to deep garnet-purple in color, it leaps from the glass with notions of chocolate-covered cherries, crushed blackberries and plum preserves with a cedar and Marmite toast undercurrent plus a touch of beef drippings. Full-bodied and packed to the gills with youthful, crunchy black fruits, it has a firm frame and finishes a little woody at this youthful stage, but it should emerge singing in 2-3 years.”
91+ Wine Advocate $29.99/btl
