Fior d’Arancio For this special blue, Sergio Moro pierces the young cow’s milk cheese, places it in barrels, and then bathes it in Fior d’Arancio DOCG sparkling wine for about 30 days. It is then left to finish aging on wooden planks. The wine helps the cheese develop aromas of stone fruits, honey, and orange blossom.
Delice de Bourgogne Creamier, more decadent answer to its classic cousin, Saint Andre. This old style triple crème is the perfect unison of full-fat milk to fresh cream, balancing a rich, full bodied flavor with a delicately smooth, melt in the mouth texture.
Pecora Rossa Sweet and creamy, with delicate sensations of boiled milk and fresh grass, this cheese takes its characteristic red and orange tones by washing the rind with Annatto during the aging process. Introducing: The Gourmet Shop Wine Classes
Come learn about the fun and fascinating world of wine!! Each class will be approximately 90 minutes, led by the “Wine Professor” Emilio Guerra. Emilio has traveled throughout the best wine regions of the world to further his wine knowledge and educate his palate. Emilio is a certified sommelier, educator and holder of the WSET Level 3 award in Wine & Spirits. Students will taste 4 wines each lesson accompanied by a cheese plate. Informational handouts and materials are included with the price of admission. Classes begin at 6pm in the Café. Limited seating so reserve your space now!
