Cheese Board
Cana de Oveja Soft-ripened cheese made from pasteurized sheep’s milk, in Murcia, Spain. This cheese is similar to the French Bucheron. This creamy, gooey cheese has a bloomy rind with flaky, crumbly texture with notes of tangy butter in paste. Cana de Oveja is aged for 21 days, as it ages, the flavor intensifies. It pairs well with white wine, almonds and fig spread. $9.00/lb
Schlossberger Jung Blue Label The raw-milk baby brother of the super-matured Schlossberger. Rich and buttery like his sibling, with a mild, flexible dough. $22.00/lb
Gorgonzola Cremificato A creamy blue with a quality unrivaled by other young or “dolce” Gorgonzolas. In Roquefort, this delicate, soft, and unctuous blue is mild and subtly sweet with fresh, grassy undertones. The perfect dessert cheese! $18.00/lb
Wine of the Week
Luca Malbec ’16
“(14% alcohol; aged in 30% new and 70% second-fill French oak; from vines in Altamira, La Consulta and Gualtallary): Full, bright ruby. More pristine on the nose than the Paraje Altamira Malbec, offering scents and flavors of blueberry, blackberry, cherry, crushed rock, bitter chocolate and violet. A step up in sweetness and pliancy as well and less wild, offering very good concentration and balance if not quite the energy of the wine from Paraje Altamira (even though this Malbec actually includes some even higher-altitude fruit). Finishes with good breadth, serious chewy tannins and subtle lingering sweetness. Turned a bit dry with aeration.”
91 Pts Vinous $35.99/btl
