Recipe Spotlight:
No dish is as synonymous with Spanish cuisine as this pan of fragrant, saffron-infused rice, seafood, and veggies. The key to making a good paella is starting with the right basic ingredients and then knowing which shortcuts to take to arrive at maximum flavor with minimal hassle (meaning more time spent relaxing with your family and friends!)
At TGS we have a range of authentic ingredients that will make it look and taste like you have spent hours in the kitchen. So, grab a bottle of wine, get the fire-pit started and invite your friends and family over for a dish and evening they won’t soon forget!
Ingredients:
- 2 tbsp Spanish olive oil*
- 1 bell pepper, diced
- 1 yellow onion, diced
- 1 jar Matiz Sofrito*
- 1 ½ cups Matiz Bomba Paella Rice*
- ½ tsp saffron*
- 4 cups Aneto Paella Seafood broth*
- 1lb fresh seafood (mussels, shrimp, clams)
- 5-6 Matiz Piparra Peppers, sliced*
- ½ cup green peas
- Lemons & fresh parsley for garnish

Directions:
In your paella pan, heat the olive oil and sauté onion and bell pepper until fragrant.
Add jar of sofrito and simmer for 5 minutes.
Add paella rice and distribute evenly. Lightly crush the saffron in your hands and add to the dish.
Slowly add the seafood broth. Do not stir the rice at this point. Stirring can cause the rice to become mushy and will disturb the soccarat. (Soccarat is the slightly crusty flavor-enhanced caramelized layer of crunchy rice that forms on the bottom of the paella pan. Delish!)
After 10-15 minutes gently nestle the fresh seafood into the mixture. Then sprinkle your Piparra peppers and green peas over top.
Once liquid is absorbed (about 5-10 minutes) remove from heat, cover with foil & let sit for 10 more minutes.
Garnish with chopped fresh parsley and lemon wedges.
Serves 4-6
Some suggestions:
Add extra veggies for a healthier dish.
For meat lovers add chicken, duck, or chorizo.
