Jamon Iberico Have you tried the newest addition to our Charcuterie selection: Jamon Iberico? Iberico pork comes from the distinctive Black Iberian Pig. Native to areas of Portugal and central and southern Spain, the pigs’ diet of acorns and elements of the natural forests in these areas impacts the meat directly, giving it a nutty, evocative flavor. The ancient oak pastures of Spain, the noble Black Iberico pig, and the mountain air in which it is cured are all required to transform it into one of the world’s most exquisite foods. It can take up to four years to properly cure the ham. Some of the best chefs in the world like Joel Robuchon and Anthony Bourdain, have declared Jamon Ibérico de Bellota as the “Finest cured meat on earth”. It is richer and more complex than even the best prosciutto. The meat is more flavorful, more juicy, and has a very distinctive ruby red color. Sample it thinly sliced with a piece of toast or bread. A dry bubbly wine like Spanish Cava (brut-nature or sec) or a dry French Champagne makes for a phenomenal, and practically unbeatable jamón ibérico pairing. From the smell to taste, the acorns really are the defining quality of a top-grade Jamón Ibérico. In addition to lending the prized pork its unique aromatic combination of sweetness, nuttiness, and earthiness, the oleic acid in these acorns makes for the soft, melty fat that makes Jamón Ibérico so divine.
