New Arrivals
Mikuni Wild Harvest Dried Mushrooms
Black Trumpet Dried Wild Black Trumpet Mushrooms offer rich, buttery flavors and a sweet aroma that is often described as “woodsy”. Reconstitute and add a great woodsy flavor to roast meats and poultry. Add extra dimension to mellow butter-based sauces to heighten their rich, buttery flavor.
Chanterelle Dried Wild Chanterelle Mushrooms are a great reconstituted then sautéed in butter. Serve with roast meats and poultry, or blend into sauces, vegetarian recipes and stir-fries. Pairs well with butter or cream-based sauces and dishes. They have a delicate peppery flavor with a sweet fungi aroma reminiscent of apricots.
Morel One of the most highly prized wild mushrooms, in a convenient, shelf-stable dried form. Wild Morel Mushrooms look and taste unlike any other variety. They have tall, peaked, honeycombed caps, and are completely hollow. Their flavor is described as an earthy combination of butter and faint smoke. These characteristics are said to improve or even intensify when dried. Morel Mushrooms’ rich, earthy-buttery taste pairs beautifully with cream or white wine sauces.
Porcini Dried Wild Porcini Mushrooms have a powerfully earthy aroma matched by their full-bodied, umami-rich flavor. Reconstituted Porcinis are firmly textured and almost smooth when bitten into. They are frequently chopped before they (and their delicious soaking liquid) are used in recipes. Porcinis are a classic addition to risotto, pasta dishes, soups, and stews.
Lobster Lobster mushrooms have thick, meaty flesh and a deep, earthy flavor. The naturally vivid orange-red color is somewhat muted by the drying process. Delicious baked, roasted, grilled or sautéed in plenty of butter. Serve them with or instead of meat. Sauté with garlic and thyme and toss with pasta. Or poach in butter with real lobster for a creative and whimsical presentation.

Wine of the Week
Fumey Chatelain Arbois Pinot Noir ’22
“The 2022 Aux Melinots Pinot Noir feels quite ripe, with notes of ripe berries and decayed flowers, some earthiness and abundant tannins. The full clusters fermented with a maceration of 30 days, and the wine matured in 228-liter barrels for one year. Despite everything, the wine is only 13% alcohol, but the sensation is of higher ripeness. It tastes a little warmer and riper.”
