Cheese Spotlight
Red Witch With the spookiest day of the year just around the corner, we wanted to shed some extra light on a truly spellbinding cheese. Meet:Red Witch.
This raw, cow’s milk gouda from Switzerland was created for the Swiss Carnival season; a pre-Lent celebration that mirrors our Halloween traditions with costumes, games, etc. Red Witch was created as a “table cheese” of sorts- to be enjoyed by all ages and palates (and paired with almost any alcohol one might be indulging in during the festivities).
It’s washed in a brine during the aging process, and periodically rubbed with paprika, adding to its bewitching appearance. It’s quite aromatic, with notes of peanut, hazelnut, and browned butter. Flavor-wise, imagine Appenzeller and Fontina had a baby…it’s so delightful you’ll have to keep the trick-or-treaters away!

Domaine Durand Cornas ’18
“The 2018 Cornas Premices comes from the brothers’ young vines, but it is a concentrated, stony example in its own right. Dark in hue, it offers up scents of red plums and crushed stone, plus subtle herb and floral shadings. Medium to full-bodied, with a silky texture and a refreshing hit of licorice on the lengthy finish, it’s approachable now, yet should drink well for at least 5-6 years.”
